Bean Chilli

Ingredients:

1 large onion, medium dice, (175g)

1 red pepper, medium dice, (150g)

1 carrot, peeled and medium dice, (120g)

2 clove garlic, chopped, (10g)

1 red chilli, seeded and chopped, (10g)

1 tin chopped tomato

2 tin chilli beans

1 tin sweet corn, drained of water

1 tsp ground cumin

2 tsp salt

½ tsp ground black pepper

1 tbsp olive oil

2 tbsp tomato paste

 

Method:

  1. Add oil to heavy bottom pot and add onion, carrot, red pepper, garlic and red chilli, cook over medium high heat till vegetables are tender (5-8 minutes)
  2. Add chilli beans, sweet corn, chopped tomato and water, cover and simmer for 15-20 minutes giving a good stir often.
  3. Add tomato paste, cumin, salt and pepper and cook another 5 minutes till chilli starts to thicken.
  4. Remove from heat and adjust seasoning if desired, garnish with chopped coriander leaves and lime wedges.

Serving Suggestion:

Serve with a jacket potato
