Prawn & Avocado Cocktail

1) Put the ketchup, mayonnaise, horseradish, Henderson’s relish, lemon juice, parsley and pepper flakes into a bowl and whisk until smooth

2) Take the prawns and diced avocado and add to the ketchup mixture, mix well to evenly coat and put in the fridge until ready to serve

3) To serve place the shredded gem lettuce into small serving bowls and spoon the prawn cocktail onto top of gem lettuce, sprinkle with sea salt, cracked black pepper, smoked paprika and serve with lemon wedges on the side.
